Angel Hair Pasta w/ Chicken and Black Beans



1/2 lb angel hair pasta
1 tbsp olive oil
1-2 cloves of garlic (minced)
1 can (14.5 oz) chicken broth or 1 1/2 cups
1 can petite diced tomatoes (undrained)
1 can black beans (drained)
2 cups chicken (cooked & shredded)
1/2 tsp chili powder
1/2 tsp cumin
chopped cilantro (optional)

don't be put off by that long list from this girl. you have a lot of those ingredients already and here are 2 things to make it easier. 1 - use a rotisserie chicken for the chicken. i buy a chicken and we use half for a meal, then i use the other half for this recipe. 2 meals out of it, awesome. 2 - buy this special stuff and leave it in your frig. then you always have garlic on hand AND it is always minced. love it.

in a large skillet over medium heat, heat oil and garlic. when garlic lightly goldens, stir in broth, tomatoes, beans and chicken. add spices and mix well.
heat to boiling; reduce heat and simmer 5 minutes.
break dry pasts and cook according to package. drain.
toss hot pasta and sauce; sprinkle with cilantro.
makes 6 servings.

saw your fish taco recipe the other day and i came to get it. and i just saw this recipe which i am 99.9% sure i brought you when you had harper. hooray! so glad you love it! and i feel like a stalker, but i really only popped in when i saw your post linked to facebook. your kids are so adorable. wish we still lived in nashville to know you guys better. take care! (and thanks for the fish taco recipe, which i haven't tried yet, so my thanks is presumptuous.)
